Happy Mother’s Day To all the super Women. Have you ever thought, where you would have been? or what you would have been without your mother? I have tried and the mere idea of it ain’t a heart warming picture. I love that we set aside a day, I kinda wish it was a week though, to honor and celebrate the women who gave birth & raised us. The mothers of the world. Allow me to brag, I have the best mother in the whole wild world. I would love to sit down and prove you with 101 reasons why, but here is a fun fact. Everybody thinks this way when it comes to their mothers. Guess what it’s completely okay after all. This single handily proves that mothers are after all special.
Apart from being beautiful, My mother has a hurt of gold. I see more and more of this traits in this Heaven-sent woman especially now that am in my 20’s. Hope majority of you can relate to this feeling. I would love to say the mother-daughter bond between us has grown profoundly, and I couldn’t be more luckier. She is my best friend, my adviser, my sponsor, my confidant and everything in between. She makes celebrating mother’s day a Breeze. If I ever grow into at least half a woman she is today, It’s safe to say My life will be a complete. Every year as the Mother’s Day approaches I get a little nostalgic about my mother and how much celebrating her in my day-to-day means.
This post is more of an open letter to all the moms. Think about it, the title mum isn’t easy to come by. Some mothers are battling infertility, miscarriage, single parenthood and even loss of a child. So a toast of love and appreciation to all the strong women out there, This Mother’s Day. The ones with full frown kids, the ones in-between raising their sweet babies and the once who find themselves in the throes of pain. Today we celebrate you.
There are a million and one ways to celebrate your Mother, Wife, Aunts, Sister or Grandmother this Mother’s day. In terms of gifts I have come up with a variety of gift ideas this Mother’s Day and a little extra in the end of the blog. Just to mention but a few: An engraved necklace, a Mother’s Day mug, A bouquet of flowers, Wine bottle, Mother’s Day card or a hand written letter, A book (for the ones with reader moms), Parisian Candles, a bathroom pamper set, a journal, a Bible or a Quran, a scarf, a perfume, gadget, canvas tote, jewelry, Dessert truffles, cookbook, forever frame, a posh purse, take her to dinner or better yet a Homemade brunch.
Speaking of a Mother’s Day homemade brunch, I have a little something for my beautiful readers. If you follow me on snapchat @Kymmie-21 you would have seen the behind the scene of this . Try baking her a cake and throw it into the brunch mix. Just not the boring everyday cake. I am talking about not-your-average-day-Lemon-&-yogurt-Cake with a double chocolate frosting. Did somebody say yum! This recipe produces one of the best cakes I have had in the longest time and the lemon flavor gives it just the edge it needs. Don’t just take my word for it. Go give it a try, best believe people will be begging you for the recipe details after the first bite. You are welcome.
Mother’s Day Lemon & Yogurt Cake Recipe:
Ingredients:
- 1 1/2 cups of all-purpose flour.
- 2 Tsp Baking powder.
- 1/2 Tbsp salt.
- 1 cup plain yogurt.
- 1 1/3 cups of sugar.
- 3 eggs.
- 1/3 cup Lemon.
- Lemon zest ( 2 Lemons).
- 1/2 cup butter.
For The Chocolate Frosting.
- 1 1/2 cups butter.
- 1 cup unsweetened cocoa.
- 5 cups confectioner’s sugar.
- 1/2 cup milk.
- 2 Tsp Vanilla extract.
- 1/2 Tsp Espresso Powder.
Directions.
-Preheat the oven at 350 degrees and grease your baking pan with butter and line the bottom with a parchment paper or a baking paper.
-stir together in one bowl; Flour, baking powder and salt. In another bowl whisk together the yogurt, eggs, sugar vanilla essence.
-Mix the dry ingredients with the wet once using a spatula and add the (partially melted) butter in the mix.
-Mix it together to form a heavy paste, and pour into the baking pan and bake for about 50 minutes.
-For the frosting, mix together in a large bowl all the ingredients and whisk into a heavy paste, pour over the cake and set it in the fridge so as it may cool.
